My name is Tom Brown and when The Real Focaccia refers to 'we' it really means just me and my trusty tuk-tuk, Gordita. I am owner, baker, logistics manager, bookkeeper, retail manager and head of hygiene.

I have over 30 years experience working in the finest gastronomic establishments beginning in my family food business when as luck would have it an opportunity arose to learn the art of all things charcuterie and the like in Alsace and Paris. I survived and brought my skills back home... but soon I needed new challenges... And so I sought shelter with folk from Genoa, in Barcelona, of course and learned to make focaccia(fugassa), the Genoese way. Several years later, after jobs such as chief backside dragger, head moaner, and senior responsibility shirker I finally took the bull by the horns and became my own boss giving me a sense of purpose, passion and a good hard work ethic... which I now deliver with pride to you...
